After a hundred years of studies, Swiss scientists have finally revealed the mystery of the holes in their national cheese.

According to The Telegraph, researchers at Agroscope, the state centre for agricultural research in Switzerland,

have determined that the characteristic holes found in some types of cheese,

such as Emmental and Appenzell, are caused by small pieces of hay present in the milk used to make them,

.

The researchers added different amounts of hay powder to milk during a series of experiments. They discovered that this activity allowed them to control the number of holes in the cheese.

According to the scientists, the results also explain why the holes have decreased over the last 15 years. The reason is that modern milking techniques with sealing machines have almost eliminated the possibility of hay particles ending in the milk.
